ZUCCHINI BAKE

This recipe tastes so much better baked in muffin cups rather than the
traditional slice tin.
Great for lunches or as finger food when small cups are used.

INGREDIENTS

1 Medium zucchini
1 Large carrot
1 Medium onion, chopped finely
3 rashers bacon, cut up
1 cup strong grated cheese
1 cup SR flour
1/4 cup oil
3 – 4 eggs
¼ Cup bread crumbs

Pre cook bacon and onions in a little oil (extra)
Grate carrot and unpeeled zucchini( coarsely)
Add bacon, onions, oil and eggs, mix well
Add flour and cheese
Season with salt and pepper.
Pour into non stick muffin cups
Sprinkle with crumbs (Kellogg’s are the best) and a little extra grated cheese
Bake in moderate oven 30 to 40 minutes or until browned.
